I havent been posting for a hot minute but there is a lot going on so excuse my mini hiatus… On the 29th i moved to Roanoke Virginia to work under a very talented chef , Joshua Smith and a very beautiful and very sustainable Farm supporting ,operated restaurant , Local Roots … Well this was my first day going into a special dinner but what a nice event and two of the nicest people i met in this industry , Mike Solomonov and his sous chef driving all the way to Roanoke in the wee hours the day before in the middle of restaurant week in Philadelphia!! Yeah these people have love for food and this was one fun event to do and such an inspiration to me to see another dimension of modernized Mediterranean fare …

Rappahannok River Oysters , Tartar and sesame crust , celery Sorbet , Israeli salad.
Seared Trout , Fried Corn , Potato confit, Pickled garlic .
Chicken Kefta . Moroccan Csrrots, cous cous , Harissa.
Lamb Chops , Field Pea Pilaf , Eggplant , Anchovy.
Orchid root Custard , Peaches.Licorice ,pistachios.
