These words were in my head for the duration of my trip back from Charleston South Carolina to Virginia Beach….It was a phrase Sean Brock said the last day…He said ” we are all kids …Big kids….” referring to his crew in Mc Cradys kitchen…..
I don’t know why but it stuck in my head for a while…Kids…Maybe that is the recipe for success…No Agendas , no overambitious pretentious people surrounding you…Just “Kids”…Kids are like champions..In that kitchen i met only champions… a collective of fine tuned culinary “machines”, yet so approachable and kind to accommodate most questions even the obscene….
These champions are willing to learn and that is the first successful step in our business…They are like sponges absorbing every fact every reaction…Willing to educate themselves and continue to grow in personal and professional level even dealing with tasks and projects completely unfamiliar….
Then they act upon….Have you noticed how kids are geared towards action? Champions are the same…They use their new found skill or process into action taking solid steps to improve their performance …they act even if they are not sure if the course of action will be completely successful….
Then that’s another part of the champion mentality….Champions learn from failure and they are not afraid to fail and try again using a new approach…Champions have the courage to fall down and not be discouraged…They pick themselves up and continue trying…
Adoptive as these “kids” are i must admit its not survival of the fittest bust survival of the most adaptable…Darwin must have it wrong…..
As children we learn to change relatively easy and adapt to long term change….We are more willing to adapt to situations and adjust our behavior accordingly..The more we grow the more we become more rigid in thinking unwilling to accept that there might be better ways to do things…In the constant evolving environment of the restaurant business resistance to change makes us obsolete….Champions just like kids are only interested in success and they are those who adapt themselves and their business to changing trends….
And of all things that these “children” have is their inventive nature….As they come in this world with no preconceived notions of doing things…And they not only learn from what has been done before..They also find better more efficient faster and cheaper ways to do things….
Sean you have changed completely the way i see food like i told you…..And i guess you are right your crew is a bunch of kids…All in their unique greatness
